Try This Entirely Different Mexican Black Bean Salad Recipe

Good food is something you just cannot resist. When it comes to Mexican food, the temptation is even more serious. It doesn't take too much time or too much effort to prepare some of those recipes, and you will be more than satisfied. For example, you could try this entirely different Mexican black bean salad recipe. It's not something you will find in any Mexican restaurant, but it is based on similar principle.

So, for this lovely salad you need to prepare following ingredients: One can black beans and sweet corn each, one fresh green onion, tiny sliced, one teaspoon white vinegar, two spoons olive oil, red sweet pepper, chili powder, salt, pepper, one avocado, two minced garlic cloves, two cooked eggs, one lime, two in skin cooked potatoes. Peel and slice eggs and potatoes.

Combine sliced onion with vinegar and salt and set aside. You can also put it into the fridge for a while. Slice red pepper and avocado. Mix garlic, lime juice, oil and spices, add sliced onion with vinegar and add all other ingredients. Mix well and decorate with fresh coriander leaves. Add as much spices as you want, or more olive oil, according to your taste.

This recipe contains really unusual ingredients for this type of salad, but it tastes great. You will need one can black beans, one can sweet corn, 250 grams spinach, as young as possible, 200 grams feta cheese, three toast slices, salt, pepper, olive oil, lime juice and garlic, as well as one or two chili peppers. Rinse and dry beans and corn.

Grease the pan and bake toast diced into small cubes, salted and sprinkled with oregano. In another bowl, combine lime juice, salt, pepper, sliced chili peppers, garlic and oil. Add fresh spinach. If the leaves are larger, cut them into strips first. Add toast cubes, diced feta and all other ingredients and mix well.

You will need a little more time for preparing this recipe, but you will love it. Prepare one small eggplant and one zucchini, green and red sweet peppers, one each, corn and black bean cans, one tablespoon acetto balsamico, three cloves garlic, minced, avocado, two tortillas, two limes, grated hard cheese, salt, pepper, chili powder and you will also need a good grill.

So, slice and dice what has to be sliced and diced first. Grill eggplant slices or strips, zucchini and sweet green pepper, and then grill tortilla stripes as well. In the meantime, make a dressing. Combine oil, juice, spices, garlic and acetto. Mix well and add grilled ingredients, while still hot, and all other ingredients. Sprinkle with grated cheese and leaves of basil or coriander.

This last recipe is really simple and easy to make. One can black beans, one can corn cobs, a few dried tomatoes, sliced, olive oil, sliced avocado, sliced red sweet pepper, minced garlic, lime juice and stripes of fresh green salad, one teaspoon of salt, pepper and chili powder each. Simply mix all these tasty things together and treat yourself with this delicious and interesting meal. You can serve it in tortillas.
